Recipe: How to Braise Steak - The easy way to tenderize meat



Braise the steaks

Preheat your oven to 160C/Gas 2. Using a sharp knife, make a few incisions in the sides of 4 lamb shanks and push in several sprigs of fresh rosemary. Brown the shanks in a casserole over a high heat, season, then set aside. In the same pan, fry 1 chopped onion, 4 chopped anchovy fillets and 1 crushed garlic clove until softened. Add 2 tbsp tomato puree, stir frequently and cook over a low heat for 5 mins. Add a dash of sherry vinegar, a bottle of full bodied red wine and bring to the boil. Boil until mixture is reduced by a third. Add 15 chopped dried apricots and 750ml lamb stock and bring back to the boil. Return the shanks to the pan and cover loosely. Cook in the oven for 3 hours until the lamb is tender and pulls easily off the bone. Brilliant served simply with mash and some green veg.
